Jerez is a large wine region in southern Spain and is famous for the production of Sherry. The wines from Jerez are subject to the country's highest regulatory standards. The predominant grape here is Palomino, a delicious variety, which undergoes a unique process to produce the fortified Sherry. Sherry is produced in large volume by modern, efficient, methods of crushing and vinification. The making of Sherry bears a definite statement of importance of soil as well as climate. As a viticultural area, Jerez is divided into three sections, all based on soil type.
